This edition, we’re excited to be collaborating with Curtin University student dietitians to deliver a range of nutrition and cooking workshops across the City of Cockburn. We kicked off the first session yesterday and are looking forward to the upcoming workshops in this series.

Also coming up, there’s a free Speech Pathology service available through Curtin University, along with free financial counselling for those who would like extra support managing their finances—because, let’s be honest, our financial wellbeing and our health often go hand in hand.

Finally, we’ve included some simple exercises you can do while waiting for the kettle to boil or the washing machine to finish its cycle, plus a delicious Egg Banh Mi recipe to try at home.

Nutrition for Perimenopause

Come along to our workshop, where final year students from Curtin University share some nutrition tips for perimenopause. We will then finish off by preparing a dish together.

INGREDIENTS

Vegetable pickle
  • 1 cup rice vinegar
  • 0.5 cup sugar
  • pinch of salt
  • 1 cup daikon radish, cut into strips
  • 1 cup carrot, cut into strips
Sandwich
  • 4 large eggs
  • 2 mini cucumbers, sliced
  • 0.25 cup coriander, chopped
  • 6 dinner rolls OR 2 Vietnamese baguettes
  • 0.25 cup mayonnaise
  • 0.5 tsp soy sauce
  • garlic powder to taste
  • Optional toppings: sriracha sauce, lime juice, sliced jalepeno




METHOD

  1. Combine the rice vinegar, sugar, and salt in a small pot. Heat over medium heat until the brine reaches a boil. Whisk to make sure the sugar dissolves thoroughly. Once done, transfer the pickling liquid to a container or a medium-sized bowl to cool.
  2. Add daikon radish and carrots to the pickling liquid once it has cooled and marinate for 30 minutes. Drain.
  3. Cook eggs according to your preference.
  4. Slice the bread in half without cutting all the way through. Spread mayonnaise mixture on both inner sides.
  5. Spread a generous amount of vegetable pickles on the bottom, top with two eggs, and garnish with cilantro. You can add optional toppings if you like. Enjoy!
